“Wine Atelier Šapat,” located on the sun-drenched slopes above Slankamen, is a fusion of ambition, precision, and terroir-driven winemaking. Surrounded by 12 hectares of vineyards and a modern 1,000 m² winery, Šapat focuses on limited-edition wines that combine authenticity with international aspirations. While the Michelin-starred restaurant Fleur de Sel adds to its prestige, the true core of Šapat’s identity lies in its wines.
Acclaimed and awarded, Šapat’s wines necessarily come as long-awaited. The 2025 collection showcases both refinement and expansion of style. Classic Chardonnay 2024 is fresh and vibrant, while Atila Chardonnay 2023 offers a rich, barrel-aged expression. Nera 2022, a varietal Merlot, is designed for everyday enjoyment, and Cuvée 2022 blends Merlot and Cabernet into a structured, elegant wine.
The highlights are the red debuts: Atila Cabernet Sauvignon 2022, the first red fully crafted under the guidance of a well-known Serbian winemaker, Mladen Dragojlović, aged in 100% new French oak, and Terol 2022, a rare Teroldego—unique in Serbia—produced in small series with a profile of bright acidity, spice, and alpine character.
Šapat’s excellence is recognized internationally: the Fleur de Sel wine list ranked among the 14 finalists at the Star Wine List of the Year International Open in the medium-sized category. The winery’s annual production is around 50,000 bottles, distributed primarily through the HoReCasector to preserve exclusivity. Whites partially age in Roman amphorae before oak, blending tradition and innovation, while reds undergo long maceration and careful barrel aging for depth and structure.
Through its clear focus on terroir, limited volumes, and meticulous craftsmanship, Šapat is setting new standards for Serbian winemaking—proving that local vineyards, when guided by vision and precision, can produce truly world-class wines.
